I wonder if you are one of those people who is feeling like this Christmas has been a time of excess and overindulgence.  This Christmas for me has meant a time of eating sugar (which I don’t do for most of the year!), of indulging in special foods such as smoked salmon and champagne, I have also seen more presents under my Christmas tree than is strictly necessary.  We have been given so much food this Christmas, biscuits, chocolates and other sweet treats.  But  I also brought quite a lot of food, especially as I had guests for Christmas Day lunch.  We were still eating food that I brought for Christmas Day a week later.  How long does your Christmas food last?  How much of it gets thrown away?  According to an article in the Independent we in the UK waste £64 million on Christmas food!!!!   This seems absurd when there are so many people in the world who on Christmas Day went hungry.  As well as the images that you may be familiar with of hungry children in Africa, or those we may work with in Chennai, there are also those people not necessarily a million miles away, maybe your friends and neighbours.  More and more people in the UK are having to rely on food banks to be able to support and feed their families.

As we come to a new year, let’s have a new start.  Let’s just take what we need.  Lets give what we can to those who are hungry.  Let’s use up all the food we buy and let’s be creative with our leftovers.  It may only be a small thing to do, but it can make a difference, to others and to ourselves.

To get you started here is a creative use of leftover vegetables.

Vegetable Poha in a Cup


1/2 small onion

1 cup of leftover veggies (I had carrots, peas, beans and sweet corn, but use what you have!)

1 tsp curry paste

1 stock cube (I used a chicken one, but use what you have)

1 cup of poha (flattened rice)


Finely chop your onion and dry fry for a couple of minutes until soft.

Add your curry paste and cook for a minute until the spices release their aromas.

Chop your veggies and add to your onion/spice mix add your crumbled stock cube and  tbsp of water and cook for a couple of minutes.  (At this point you could allow this to go completely cold, so that you could make your own pot noodle or cup poha to take to work)

In a large cup or soup bowl, add one cup of poha and add your veggie mix on top.

Pour over boiling water to cover the poha and veggies and stir.

Cover and leave for 2-3 minutes.

Stir again and enjoy.
